A distillery audit covers three things: the paperwork (origin, licensing, prior lab results), the process (equipment condition, batch consistency, hygiene) and a fresh sample pulled and analysed independently of anything the distillery provides.
It is deliberately unglamorous work, and it is also the reason a buyer can trust what arrives at the dock matches what was promised on the contract.
